Open the cheese strings and place in the freezer for 2 hours or until completely frozen
Preheat oven to 400°F.
Combine the flour and cornstarch in a shallow dish.
Combine the italian and panko bread crumbs in a separate shallow dish.
Beat the eggs and olive oil in a separate shallow dish until well combined.
Dip each cheese stick into the egg mixture and then gently roll in the flour mixture.
Dip the cheese stick back into the egg mixture and roll until fully coated. Finally, place the cheese stick into the bread crumb mixture and roll and press the cheese stick until fully coated.
Place the cheese sticks back into the freezer until ready to bake.
Remove the cheese sticks from the freezer and lightly spray with cooking spray.
Bake for 9-11 minutes or until lightly browned and cheese is melted.
