Zucchini Bread

Ingredients

- 3 eggs
 - 2 cups sugar
 - 1 cup oil
 - 2 Tbsp. vanilla
 - 2 cups zucchini
 - 2 cups flour
 - 2 tsp. cinnamon
 - 2 tsp. baking soda
 - 1/4 tsp. baking powder
 - 1 tsp. salt
 - 1 cup chopped nuts (optional)
 
Equipment Needed

- Two loaf pans
 - Mixer
 - Medium mixing bowl
 - Large mixing bowl (if not using stand mixer)
 - 1 cup liquid measuring cup
 - 1 cup dry measuring cup
 - Tablespoon
 - Teaspoon
 - 1/4 teaspoon
 
Instructions

- Preheat oven to 350 degrees
 - In mixing bowl, beat eggs til frothy
 - Add in sugar, oil, and vanilla. Beat til thick and lemony.
 - Add zucchini.
 - In medium bowl, mix flour, cinnamon, baking soda, baking power, and salt together.
 - Gradually mix in dry ingredients til fully incorporated.
 - Mix in nuts (optional).
 - Put batter in two loaf pans.
 - Bake for one hour.
