Wedding Chicken

Ingredients

- 3/4 - 1 lb. chicken breast
- 75 ml olive oil
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 3/8 tsp. salt
- 1/4 tsp. pepper
Instructions

- Pound chicken with mallet until uniformly 1/2" thick
- Combine olive oil, oregano, basil, salt, and pepper into a 1 gallon zipper bag
- Place 2-4 chicken breasts in zipper bag and massage the marinade until chicken is evenly coated.
- Seal the bag and place in fridge for 4-24 hours. Use a bowl to prevent leaking.
- On a grill or in a pan at high heat, cook the chicken breast for 2-4 minutes per side.
