Baked Feta Pasta #

Ingredients #

  • 8 ounces dried cavatappi pasta
  • 2 pints cherry tomatoes
  • 8 ounce block feta cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 garlic cloves, minced
  • 1/4 cup packed chopped fresh basil plus more for serving

Instructions #

  • Preheat oven to 400°F
  • Place the cherry tomatoes in an oven-safe baking dish. Pour in the olive oil and season with the sea salt and pepper. Stir together until well combined.
  • Place the block of feta cheese in the middle of the baking dish, coat the block of feta chesse with the olive oil and seasoning by flipping it and dabbing it into the oil on each side.
  • Place the baking dish in the oven and bake for 35 minutes.
  • While the tomatoes are baking, cook the pasta until it is al dente. Reserve some pasta water for adding to the dish later and then drain the pasta.
  • Once the tomatoes have completed baking, remove the baking dish from the oven and immediately add the garlic and basil to the baking dish. Stir together until well combined.
  • Add the cooked pasta to the baking dish and stir to combine.
