Parmesan Spinach Pasta

Ingredients

- 1 13.25 oz package thin spaghetti
- 8 Tbsp. extra-virgin olive oil, divided into 1 and 7 Tbsp.
- 2 garlic cloves, minced
- 1/2 tsp. crushed red pepper flakes
- 6 cups spinach
- 4 Tbsp. lemon juice
- 1/2 cup parmesan cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
Instructions

- Cook and drain pasta per package instructions to al dente
- Add 1 Tbsp. olive oil into the pot the pasta was cooked in.
- Place on medium heat and saute garlic for a minute.
- Add in red pepper flakes and spinach and cook for an additional minute.
- Add pasta back to the pan and stir in the rest of the olive oil and lemon juice.
- Add cheese.
Season with salt and pepper.
