Parmesan Spinach Pasta #

Ingredients #

  • 1 13.25 oz package thin spaghetti
  • 8 Tbsp. extra-virgin olive oil, divided into 1 and 7 Tbsp.
  • 2 garlic cloves, minced
  • 1/2 tsp. crushed red pepper flakes
  • 6 cups spinach
  • 4 Tbsp. lemon juice
  • 1/2 cup parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions #

  • Cook and drain pasta per package instructions to al dente
  • Add 1 Tbsp. olive oil into the pot the pasta was cooked in.
  • Place on medium heat and saute garlic for a minute.
  • Add in red pepper flakes and spinach and cook for an additional minute.
  • Add pasta back to the pan and stir in the rest of the olive oil and lemon juice.
  • Add cheese. Season with salt and pepper.
