Baked Potatoes

Baked Potatoes #

Ingredients #

  • Some number of russet potatoes
  • 1/2 cup of water
  • 2 Tbsp. of salt
  • 1.5 tsp. of vegetable oil
  • Kosher salt for sprinkling on the exterior of the potatoes

Instructions #

  • Preheat oven to 450°F and set up a rack in the middle of the oven
  • Line a baking sheet with aluminum foil and place a oven-safe wire rack on top
  • Stir together the water and salt to make a brine
  • Scrub potatoes with scrub brush and dry
  • Poke the potatoes 6 times with a fork
  • Briefly dip each potato in the brine, shake off excess, and place on the baking sheet
  • Bake potatoes for 45 - 55 minutes until the internal temperature is 205°F
  • Remove potatoes from the oven and brush oil on the potatoes
  • Bake potatoes for an additional 15 minutes
  • Remove potatoes from oven and immediately cut an X in the top of the potatoes squeeze to release steam
  • Serve immediately
