Baked Potatoes

Ingredients
#
- Some number of russet potatoes
- 1/2 cup of water
- 2 Tbsp. of salt
- 1.5 tsp. of vegetable oil
- Kosher salt for sprinkling on the exterior of the potatoes
Instructions

- Preheat oven to 450°F and set up a rack in the middle of the oven
- Line a baking sheet with aluminum foil and place a oven-safe wire rack on top
- Stir together the water and salt to make a brine
- Scrub potatoes with scrub brush and dry
- Poke the potatoes 6 times with a fork
- Briefly dip each potato in the brine, shake off excess, and place on the baking sheet
- Bake potatoes for 45 - 55 minutes until the internal temperature is 205°F
- Remove potatoes from the oven and brush oil on the potatoes
- Bake potatoes for an additional 15 minutes
- Remove potatoes from oven and immediately cut an X in the top of the potatoes squeeze to release steam
- Serve immediately
