Baked Zucchini

Ingredients

- 2 medium zucchini
- 2 eggs
- 1/2 cup all-purpose flour
- 1/4 cup grated parmesan cheese
- 1 cups seasoned bread crumbs

- Cooling rack
- Rimmed baking sheet
Instructions

- Preheat oven to 350°F. Coat a cooling rack with nonstick spray and place on a rimmed baking sheet.
- Trim ends off zucchini and slice into 1⁄4" circles.
- Beat eggs in a small bowl or dish.
- In a separate bowl or dish, combine parmesan cheese, bread crumbs and salt & pepper to
taste.
- Dip zucchini in flour, dip in eggs, and finally dip in bread crumb mixture. Repeat with remaining slices.
- Arrange the zucchini on top of the cooling rack on the prepared baking sheet.
- Place in the oven and bake until the zucchini is tender, about 18-20 minutes.
