Baked Zucchini #

Ingredients #

  • 2 medium zucchini
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1 cups seasoned bread crumbs

Equipment Needed #

  • Cooling rack
  • Rimmed baking sheet

Instructions #

  • Preheat oven to 350°F. Coat a cooling rack with nonstick spray and place on a rimmed baking sheet.
  • Trim ends off zucchini and slice into 1⁄4" circles.
  • Beat eggs in a small bowl or dish.
  • In a separate bowl or dish, combine parmesan cheese, bread crumbs and salt & pepper to taste.
  • Dip zucchini in flour, dip in eggs, and finally dip in bread crumb mixture. Repeat with remaining slices.
  • Arrange the zucchini on top of the cooling rack on the prepared baking sheet.
  • Place in the oven and bake until the zucchini is tender, about 18-20 minutes.
