Garlic Roasted Potatoes #

Ingredients #

  • 3 lb. small red potatoes
  • 1/4 cup olive oil
  • 1 1/2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 2 Tbsp. minced garlic

Instructions #

  • Preheat oven to 400°F and set up a rack in the middle of the oven
  • Place the potatoes, olive oil, kosher salt, and freshly ground black pepper into a bowl. Toss until well coated.
  • Transfer the potatoes to a sheet pan and roast in the oven for 45 minutes. Turning the potatoes every 20 minutes.
  • Remove the potatoes from the oven and place into a bowl. Add minced garlic and toss until well coated.
  • Return the potatoes to the sheet pan and roast for 5-10 more minutes.
