Garlic Roasted Potatoes

Ingredients

- 3 lb. small red potatoes
- 1/4 cup olive oil
- 1 1/2 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 2 Tbsp. minced garlic
Instructions

- Preheat oven to 400°F and set up a rack in the middle of the oven
- Place the potatoes, olive oil, kosher salt, and freshly ground black pepper into a bowl. Toss until well coated.
- Transfer the potatoes to a sheet pan and roast in the oven for 45 minutes. Turning the potatoes every 20 minutes.
- Remove the potatoes from the oven and place into a bowl. Add minced garlic and toss until well coated.
- Return the potatoes to the sheet pan and roast for 5-10 more minutes.
