Pumpkin Chocolate Chip Cookies #

Ingredients #

  • 1 cup shortening
  • 2 cups white sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 Tbsp. milk
  • 1 15 oz. can of pumpkin
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 1/2 cups of flour
  • 1 or 2 cups of chocolate chips

Equipment Needed #

  • 2 mixing bowls
  • Cookie sheets

Instructions #

  • Preheat oven to 400°F
  • In a mixing bowl. Cream together the shortening and sugar
  • Mix in the eggs, vanilla, milk, and canned pumpking.
  • In a separate mixing bowl. Mix together the baking powder, baking soda, salt, cinnamon, and flour.
  • Slowly beat the dry ingredients into the bowl containing the wet ingredients.
  • Fold the chocolate chips into the batter
  • Use a size 70 scoop (~1 Tbsp) to form the dough into balls and place them evenly onto a prepared cookie sheeet
  • Bake for 8-10 minutes
